How will we know if the Pikachu we caught is Alolan?

Either ALL pikachu in Alola evolve into surfer Raichu, and the only way to get regular Raichu is throuh transfer/post-game, or all pikachu in certain routes. That would be my guess

As long as you caught it in Alola, I'd assume the game designers aren't that much of a jerk to introduce invasive non-Alolan born Pikachu into the wild of Alola, in order to screw over people wanting Alolan Raichu. That or maybe it's not that it being Alola makes only evolve into an Alolan form, but there's a different method to it, like using a different stone, or giving it enough pancakes in Pokemon Amie.

Yeah, I was thinking that too, I mean obviously alolan Vulpix can no lnger evolve through fire stone so at least some of them have different method of evolution

Says who? It's the same Pokemon which would react the same to the evolution stone. It just grew into its surroundings.

An ICE pokemon that evolves into another ICE pokemon using a FIRE stone. How does that make any sense?
