Why is Volcanion water? Because it is the steam pokémon, and together with heat (fire), water makes steam.

Why is Keldeo water? Because it's based on a Kelpie, a demon which is said to infest lakes.
Why is Crabrawler not water? Because it's a fucking coconut crab and it can't swim.
