So a Z-Crystal literally converts Z-Power into crystals (?) that upgrade X-type moves to X-type Z-moves.

There is no 5th move.
Basically you activate the Z crystal just like you would activate a mega evolution and choose a move of the crystal's type. It will power it up greatly and do that animation thingy.

The unique moves will likely be a fifth move, since you'd HAVE to have a Normal-type move on your Snorlax in order to use it, which just seems odd to me. Normal Z-Moves can be whatever type you choose but the Unique ones force you to have a STAB move.

So can a single crystal have more than 1 Z-Move behind it? So far it's been implied that other Z-Moves of the same type are from unique crystals for certain Pokemon.

Ummm...no. None of the pokemon's normal moves was selected. You click the Z move button and a button for the Z move you can do is shown.

If your Pokemon has two Grass moves and is holding the Grass Z-Crystal, both of its grass moves become the Z-Move. It doesn't seem likely that the Z-Move will change depending on what move you choose. If it's a Grass attack, it'll be the same generic Grass Z-Move every time.
We just don't know how this applies to non-damaging moves.
