Steel/Fighting knight + mount duo with an ability that halves Speed but doubles Defense upon reaching 50%-75% HP. Something something helped defend the kingdoms of old alongside Pokemon such as Aegislash.

It wouldn't have to be super humanoid either, just something Steel-plated and gallant.

Since the introduction of Fairy type, I've been expecting a Fairy/Fighting evolution line based on traditional swords-and-sorcery heroes with either the stage one or two based off of Link.

For the final evo, they could either have split-evos or, more likely, different forms to show different types of "heroes" like a knight form, a rogue form and a sentai/super hero.

Alternatively (probably the better idea) have the mon as part of a trio with a fairy/psychic princess-mage and a fairy/dark, fairy/dragon or dark/dragon to represent Ganon's role.
