I hope so too anon, although I'm not too optimistic about it. I'm afraid that because of its gimmick and kind of being a pikaclone it will stay a single stage mon. But it would bother me a lot in this case. Just think about it. It disguises itself as a popular pokemon to be loved because its real self isn't. So basically, even if you max its happiness, train it, play with it a lot on amie, etc. it will never be comfortable enough to show you its true form. What if it's afraid you won't like it the same? It's too sad ;_;

But it's not a Pikaclone, Sanic is this gens Pikaclone. Pokemon is full of in-lore transformations of self, like Magikarp becoming an incredibly powerful beast after living for so long as a useless fish, or the ugly Feebas becoming a beautiful serpent. Even if it's not a full friendship evolution, Mimikyu just screams a pokemon with a evolution that progresses it's own personal story. I mean the Mimikyu's entire reason, like you said, for disguising itself as Pikachu is so it can be loved, so if it's captured, and bonds deeply with it's trainer, it would finally feel love.
