Let's pretend that the reason isn't just "it's a children's game".

The most definitive "pokemon explicitly attacks a human" I can think of is Lance's Dragonite in the Rocket HQ blasting a grunt. The guy's propelled backwards into a wall and is notably dazed, but seemingly otherwise unharmed.

Team Rocket in the anime have been electrocuted hundreds - if not near a thousand, at this point - of times, and survived being flung incredible distances.

I propose that humans in the pokemon universe are incredibly durable - able to survive conditions that we ourselves would immediately perish in. If I had to guess, the reason your trainer is never dangerously attacked is that their own pokemon keep the opponent's occupied enough that they don't particularly get the chance to go in against you particularly hard because you can easily survive a hit from another monster as you're running away.
