What are some good pokemon to have on a Colosseum team?

Not hariyama

The first game

Hariyama is a staple in double battles because of its bulk and combination of Fighting coverage and decent support. Of course this is an ingame team, so you won't have access to most TMs and move tutors. Hariyama gets a passable level up movepool. Expect this to be your moveset by endgame if you decide to run with the SuMo :^)
-Fighting type move (probably Brick Break or Vital Throw)
-Fake Out
-Protect
-Earthquake / Rock Tomb / another Fighting type move
Plus it's the first Pokemon you can catch. Only 1 chance though.

Colosseum you get only so few options. You should have the core skeleton of your ingame team by the time you enter Mt. Battle. Of course you can do whatever the fuck you want, but it might be grindy if you decide to use lategame catches like Heracross or Houndoom. Here are some good Pokemon before Mt. Battle mission:
-Johto Starter of your choice
-Swablu (Altaria is bulky)
-Quagsire (comes with Surf if you didn't choose Croconaw)
-Mantine (it's decently bulky and is another Water type option)
-Misdreavus (the only Ghost type you can catch, not that Ghost is all that good in this game)
-Meditite (pure power is good)
-Flaaffy (best Electric type other than late-game Raikou)
-Plusle (an okay Electric type, may need grinding. has great support moves)
-Skiploom/Jumpluff (amazing support moves, no offensive presence though)
-Hitmontop (get him at a high level, but his movepool sucks ass)
-Makuhita (first catch)
Those are all found in the early game.

oh yeah and Espeon > Umbreon because Umbreon has awful attacks and Espeon can dish out damage and support at the same time. Use whatever you want OP though.
