If there were gyms in the game I'm guessing this is around where the 5th gym would be. Early 30s for the Gym 5 area has been done before, so not exactly awful.

I really don't understand what kind of progression this game will have, maybe it's like in the first games where you can explore new levels without necessarily advancing in the story or maybe it's just a really short game

Where have you been? There aren't any gyms. This still seems to be a bit later in the game, at least the second half. You've finished the first island at this point and you've likely finished the second as well.

Unless this game has complete freedom of movement, and you can traverse the islands at will and challenge the captains in any order. In this case, the trial captains would have different levels depending on when you challenge them.

Ex. If you do the Yungoos trial last, you might face a level 50 Yungoos, but if you do it first, you might face a level 15 Yungoos.

Highly, highly unlikely but would be awesome if they could work this in and make it practical. It seems very difficult to do with evil team encounters to deal with as well and legendaries, but would give this game so much more replay-ability.

If there were gyms in Alola this area would probably be around where the 5th Gym would be. One on MeleMele, three on Akala, three on this island and one on the last island. In Gens II, III and V the 5th gym leader's ace was 31 so this doesn't look too off a common leveling curve.

Tapu Koko is encountered at level 60. Not to mention Melemele is a small island, and Akala was around level 25 or so for levels. The island you fight Guzma at is a lot larger, so you're gonna be spending more time there. In terms of "gyms," this is probably more around the third or fourth "gym" in terms of levels, rather than the fifth.

Christ going back to the old shitty scaling after the great scaling in X/Y is gonna suck ass. Level 55 endgame when the max level of a pokemon is 100 just isn't fun. X/Y although it was incredibly easy at least got you all the way to 80 when you fought the E4 leaving you the end game levels to grind out.
