Here's the deal: I know almost nothing about Pokemon Sun and Moon. So /vp/, tell me what I need to know the most out of everything else.
My perception is untainted and I'm clueless as to whatever news or talk there's been. I don't know if there's any new types or evolutions or what not. I've been staying ignorant, not having browsed /vp/ for several months now and instead just using my time for more important things. I didn't peek at any of the threads here when I came to make this post. I haven't checked any pokemon new sites like serebii because I wanted to keep my view pure and optimistic.
Now YOU have the opportunity to paint my perception of Sun and Moon however you like, and I won't look at any other information except for what is in this thread until the game comes out. Seriously.
Here are the few things that I DO know about the games:

Other than that I don't know anything. I don't even know the release date, so if someone could post that it would be great.

A new element has been introduced into the Pokémon battles in Pokémon Sun and Pokémon Moon: Z-Moves. Z-Moves are moves of great power that can only be used once per battle. When the Trainer and Pokémon’s wishes resonate with each other, and both release their full power together—the result is the explosive force of a Z-Move! All Pokémon can use Z-Moves to perform mightily in battle!
The Z-Ring fits on a Trainer’s arm, and Z-Crystals are set into it. If a Pokémon holds the same variety of Z-Crystal, the two will be able to resonate with one another. Crystals that correspond to each Pokémon type have been found in the Alola region.
There are two conditions for performing Z-Moves: a Pokémon must learn a move of the same type as a Z-Crystal, and it must be holding the corresponding Z-Crystal.
When you see these moves in action in the game, each overwhelmingly powerful move will be on full display, filling the entire screen!

This Pokémon excels at whipping its long neck like a lash to attack with its hard heads. But that neck can sometimes become a weakness...

It looks like there'll be no gyms. Instead the main plot is the Island Challenge, where you go from island to island performing trials for a series of island captains. Its been stated that this will not be limited to battling. When you complete all the trials, you battle the Kahuna of the island and/or the Totem pokemon, which is a souped up version of a regular pokemon with buffs and the ability to summon other pokemon to the battle, then you go to the next island. There's four islands in total.

Salandit emits toxic gas, together with flames, from the base of its tail. This poisonous gas has a sweet smell, and anyone who unknowingly breathes it in will become dizzy. Salandit is not a very powerful Pokémon, but its cunning nature allows it to battle fiercely by throwing its opponents off balance.
Salandit females not only release toxic gases, they can also emit pheromones that attract males of all species, including Pokémon and humans. Inhaling these pheromones may cause opponents to be controlled by Salandit’s will.
Salandit has the Corrosion Ability, a new Ability that no other Pokémon has possessed before. With the Corrosion Ability, it becomes possible to inflict the Poisoned status condition even on Steel- and Poison-type Pokémon.

The Alolan Sandshrew of the snowy mountains evolve into Alolan Sandslash with spiny backs that are covered in ice. Thanks to their icy coating, these spines are large and sharp. Alolan Sandslash hide themselves in the snow when strong enemies appear, leaving only their needles exposed and ready for business.
The weight of the ice that covers its body makes these Alolan Sandslash heavier than normal Sandslash, and this causes them to be slower. Yet in snow fields and on ice, they move by creating a path with their claws, and so they’re able to move with swiftness.
The sprays of snow kicked up by Alolan Sandslash’s movements are so beautiful that many photographers head for the snowy peaks to capture the moment. However, Sandslash live deep in the mountains, and there is great danger of becoming stranded, so it’s forbidden to climb the mountains without permission.

Minior are formed in the stratosphere and live by absorbing the detritus around them. When they’ve consumed a large quantity of particles, their bodies become heavy, and they fall toward the planet’s surface. Minior has a hard and heavy outer shell with a core inside it. The Meteor Pokémon seems to be made in such a way that if its shell breaks, it becomes lighter and can deal out quick attacks.
When its shell breaks, the core in its center is revealed. You won’t know what color will appear until this happens!
Minior has the new Shields Down Ability, which no other Pokémon has had before. With the Shields Down Ability, it will have excellent defensive capabilities as long as its shell is intact. It will also be protected from status conditions. But when its HP drops below half, its shell will break, and it will change to a form better suited to attacking.
Minior’s core will change color depending on the particular color of the debris it has absorbed. Its pastel coloration has a cute look, so this Pokémon is often used as a design motif for clothing and accessories.

On here at least it seems to be mostly well received. I think a lot of people appreciate an attempt at freshening up the formula.
As for why they did it, who knows. I for one am optimistic, sure it might end up sucking badly but I'm glad they're taking some chances and it could potentially be really great.
As for content wise, we really don't know yet, but assuming there is at least 8 captains (and it looks like there'll be more) and we get to battle each one, it shouldn't really be any less than the previous games.
All the pokemon posted thus far are legit; the leaks MIGHT be fake, but they're looking pretty solid right now.

They are just regular Pokemon that have changed after years of being in a new environment. They have new types, moves, and altered stats.

This is Mudbray and Mudsdale. They're supposed to be slow, but incredibly strong. Mudsdale is about 2000 pounds and can drag over 10 tons. Didn't stop his son from being hunted outside of Alola.
They can have the Stamina ability, which raises defense upon being hit. It apparently applies to all attacks, both physical and special.

A New Battle Format: Battle Royal
Pokémon Sun and Pokémon Moon feature the addition of a new battle format that has never been seen before: the Battle Royal! The Pokédex is a convenient tool that records information about the Pokémon you see and catch during your adventure. In Pokémon Sun and Pokémon Moon, your character receives a special Pokédex from Professor Kukui to support you in your travels. It's known as the Rotom Pokédex, and it's inhabited by Rotom, a Pokémon with the power to reside in various electronic appliances. It does much more than record Pokémon info—it sparkles with its own personality. The Rotom Pokédex shows your current location and your next destination, and it also gives you advice on where to go next, based on the conversations you have with others! It's likely to be of great help to you in many parts of your adventure.
The Rotom Pokédex is an extremely rare device. There are only a few Trainers that have one, even in the Alola region.

This is Fomantis and Lurantis, who are both pure grass type. They photosynthesize in their sleep and hunt by night, and are very fashionable while they do it. Lurantis can learn Solar Blade, which sounds like a combination of two other grass moves.

Let me explain a bit of wrestling terminology.
Heel is the bad guy, the one you're supposed to boo at.
Dark type is called Evil type if you literally translate its Japanese name, which fits, as there are only two Dark-type moves that would fall under darkness motif (Dark Void and Night Daze). Most of the darkness-related moves are Ghost-type moves (which is why Lunala is part Ghost-type).

Last but not necessarily least, this is Bewear. He's a normal/fighting type, and loves all of the earth's creatures. He tries to befriend them, but his immense strength only pushes them away.

Popplio learns Disarming Voice, which is a special Fairy-type move. While it doesn't necessarily mean Popplio will become Fairy type, it does imply that Popplio can soothe enemies with its voice, which is a quality that is associated with sirens and mermaids.
The leaks of the final starter evolutions seem to be anime reference sheets because they include what seems to be Ash and Mallow. This pretty much confirms they're real.
It may seem jarring that Popplio's final evo has human-like hair, and while it is an uncommon trait among Pokemon, it's not entirely unheard of. Pokemon in the past have been given long flowing locks of hair, most noticeably Mega Ampharos and Zoroark.

To further add to what's already been said about Litten's final evolution, Sugimori tweeted a picture of Tiger Mask, a famous heel wrestler persona.
Apparently Tiger Mask is the inspiration for Litten's final evolution. Since it's a heel wrestler, it uses shady and underhanded tactics to win, hence why many speculate it will turn out to be Fire/Dark, since many Dark type moves are associated with this sort of cheating, such as Sucker Punch, Foul Play, Nasty Plot, Taunt, and even Fake Tears.

A sea lion is a perfect candidate for a mermaid-themed Pokemon, since its natural physiology makes it look like it already has a mermaid tail.
You'll notice that Popplio's final evolution does indeed look like a mermaid, but it still retains somewhat more or less the natural body shape of a sea lion.
A sea lion's physiology allows for a creative and cartoony mermaid design, while staying true to the sea lion's natural form and not radically altering to the point where it doesn't look like a sea lion anymore.
