A lot of the newer generations never sat well with me in terms of style.

I think it's the eyes. Seriously, for some reason I liked this style that's prevalent in Gen 1 and 2. It made you think that's from the classics, and the styles felt more consistent.

Now everything that came after looks way too Looney-Toony and all over the place.

Gen 1 gets praise because while it had shit designs like my mom's eggs and my mom's sea mine, it also had the highest quality ceiling for designs.

Some of the best designs are still from gen 1. We're talking Gyarados, Mewtwo, Charizard, Venusaur, Nidoking/Queen, Scyther, Vaporeon. All classics that have a distinct style and are extremely well-designed.

Appreciating a gen isn't the same as being a genwunner, my favorite gen designwise is 4th gen anyway. Genwunners are people who think that gen 1 is the ONLY REAL GEN and that all other gens are inferior just because. Liking gen 1 is not being a genwunner.

Because both are the proper proportions for palm trees.
The left represents a desert palm tree, which are typically very short and stumpy, as well as growing in clusters with other short, stumpy palm trees. A survival tactic for them in dry inland regions.
The right represents the much more familiar coastal palm trees, that grow to obscene heights as it allows them to survive flood waters and high tides.

The better question to ask is why a group of eggs evolves into a fucking palm tree in the first place.

I'd say it's mostly due to the shift in general art style when it comes to official or presented art.
While there are some Pokemon designs that are quite suited to the modern style, I personally feel that more of today's designs are made with movement and animation in mind, compared to older designs that necessarily needed to make an impact while remaining static.

9 out of 10 times, a Pokemon design will grow on me after seeing how it moves and behaves in the anime.

Lolno. It's based on a yokai is fruit bears a laughing human face as do the fruits' seeds. It's an excellent design.

The only really questionable designs in Pokemon - those being designs that have no real logically concept behind them, or at least not one that works well or serves any real point - are indeed from Generation 1 due entirely to the size of the team and scope of Pokemon's goals... However, even then only a few are really not very good - and even at that, most of them still look great and are charming as it gets.

Bulbasaur, Jynx, Mr. Mime and maybe Koffing and Magnemite are probably the worst designs, speaking from a character design perspective in regards to the conceptual development of Pokemon designs... And even at that, they're all designed well in respect to themselves to an aesthetic degree in the very least.

The new ones are all meticulously designed and incredibly well researched, so they're all fairly easy to defend.

Whether you like it or not is up to you, I don't care and nobody else does. But from a design standpoint they're faultless - they do what they are meant to do.

A design has a concept and communicates it.
Pokemon is about adventuring through a region and the region and Pokemon are designed to communicate the atmosphere of what that adventure would be and the culture and wildlife therein. Gen 1 has the only notably 'off' designs, I actually spelled this out earlier in the thread. Even then there aren't all that many of them. Jynx and Mr Mime stick out like sore thumbs and stuff like Magnemite, Bulbasuar and Koffing are very definitely just made up nothing monsters. This makes them bad, design wise, since they don't really do anything besides look sort of cool... But they do look cool so even then they aren't horrible.

Magnemite is another piece on the whole science and technology motif from Kanto, a robotic manmade creature used by the science-related trainer classes. To go with it Koffing is another pollution manifestation, and unlike grimer/muk there's some creativity put into it the design.

Bulbasaur is a hybrid that presents the growth of a plant/animal in tandem.

Mr. Mime and Jynx are intentionally meant to feel weird and out of place. They are even exclusively obtainable by the ingame trade.
