Maybe it was my fault for leaving a Tentacruel against a Gothitelle, but I had no Dark-types and nothing with the SpD to stand against it. I honestly forgot that it got Psyshock, until it did ~40% in the first hit. A Barrier reduced it to ~30%, I healed, Barrier again, etc.

Ah ok, you don't actually play nuzlockes, that makes more sense. See, the thing is in a nuzlocke you won't always have good coverage, or someone who can take hits enough that healing items aren't just a turn to turn stalling tactic. Sure if the rng is kind you can get a good team and stomp them, but that just depends who you've caught and who's survived this far. If you've got a lopsided team then fighting them all in a row can be problematic to your lead.

Sure, assuming you've got someone who can take the hits from all five types (okay four that matter) that healing items aren't just going to be a stalling effort. No guarantees of that in a nuzlocke. Two or three hopefully, but unless you've ended up with a really good line up chances are one of them is going to hurt you switching in, and I can't think of a lead who can deal with all of them without requiring that.

I remember challenging myself in my nuzlocke to this battle as I knew that it was way too difficult. I prepared a strategy and all, but rng fucked me over and I lost all 6 pokemon (Fennekin, Bulbasaur, Butterfree, Flabebe, Bidoof, Doduo) I brought with me. I decided to continue with my only remaining pokemon, Litten, and I ended up actually winning the nuzlocke.
(I should mention that I had a self-imposed rule of using only 1 hp healing item + 1 status restoring item per battle)

Its extremely unlikely to play a nuzlocke and not have pokemon compatible TMs of every move type unless you're playing one where the rules forbids them.
NPCs deal pitiful amounts of damage compared to you unless you're using a team pf babies so healing items will net you an adequate amount of turns to either set up or finish off their remaining pokemon.
You're pretty much the epitome of thinking harder and not smarter.
