Grovyle always felt like it could've been a fully evolved Pokémon. Not a three-stager of course. Other middle evos don't really give the same effect.
Doesn't help that Grovyle is a prominent character in a popular spinoff, thus making it seem mature.

Croconaw is so random I love it.
Totodile is a little cute alligator which evolves into a fearsome Godzilla-like monster, but before that happens, it goes through a teenage caveman phase.

Continuation from >>27447035 as I've remembered some more mons.
I really, really love Lombre. Its sprite often looks like it's really heroic, like Zorro or something (yes, I know it's supposed to be Mexican), despite the fact how weak it is. I don't know how to describe it, but I love this contrast.

I also like Nuzleaf, because the original Nuzlocke. And honestly most of the starters (Ivysaur, Charmeleon, Wartortle, Bayleef, Croconaw, Grovyle, Combusken, Monferno, Prinplup, Servine, Dewott, Braixen, Frodagier).
Surprisingly, preevos of my two favorite starters didn't make the list.

I love the entire line for Lotad and Seedot, and Nuzleaf/Lombre are definitely in my top 5 mid evos.

Metang's pretty good. Sure, the whole concept of the line is pretty basic, But Metang has a nice clean design. Shame that it doesn't hit it's stride until it evolves into Metagross, even though Metagross is my favorite mon ever.
