If this was a trailer we'd be able to make a good theory by comparing it to Zygarde's HP IVs.
The issue is this was actual gameplay, with a starter actually picked, so the IVs and EVs are likely random. It could be a mixed attacker with Modest and 31 SPatk IVs, for example.

Don't know its IVs, and even then it's hard to tell base stats from level 8.

Looking to be a bulky slow mixed wall specializing in Special Attack, fitting for a possible Water/Fairy type.

EVs are basically a nonfactor at that level, which cuts down variability, though there's still alot cause it's level 8. Some guys on smogon ran the numbers and came up with:

HP Atk Def SpA SpD Spe
49-66 35-56 47-64 52-68 52-68 27-42

One of them actually confirmed that Popplio had to have a +speed nature based on the stat progression from level 6->7->8, and ruled out anything but -atk or -def for the negative part with the same logic. So there's not as much variation from potential natures as you'd expect (ranges use -atk).

So pretty much what everyone's been saying, just with some numbers to demonstrate it
