Leafeon is cute and it has a lot of defense because salad catdogs are known for being durable

Jolteon: Speed and special attack(moreso the former)/defenses
Vaporeon: HP and special attacks/speed and defenses
Flareon: attack/everything else
Espeon:Speed and special attack(moreso the later)/defenses
Umbreon: Bulk/Attack and speed
Leafeon: Attack and Defense/Special defense and HP
Glaceon: Special attack and bulk/ Hp and speed
Sylveon: Specials/Physical attack and HP

So ranked by viability, it'd be:
-Sylveon
-Espeon
-Umbreon
-Vaporeon
-Jolteon
-Leafeon
-Glaceon
-Floofeon

Vaporeon has great HP and good Special Attack, at the cost of being slow.

Jolteon has great Speed and good Special attack, but has fragile health and defenses.

Flareon has great Attack and decent Special Defense, but only has one physical Fire attack, that does recoil damage.

Espeon has great Special Attack and Speed, and reflects status moves with its HA. It has the psychic weakness, being frail.

Umbreon has great defensive stats, Synchronize for statuses, but has terrible damage output.

Glaceon has great Special Attack and defenses, but is as slow as ice, and a terrible move pool, coupled with Ice's inherent weaknesses

Sylveon has great Special Attack and Defense and good HP, plus is an OP Fairy type. Only real weakness is that it's the slowest of them all.

Leafeon has a strong defense stat, but weak special defense and health to support that, cancelling it out. Sub-par speed also means it gets hit first. Most of its strengths are countered by its weaknesses, unfortunately.

Umbreon doesn't ave one viable move. A curse set with payback is very good, and you can always run stall with toxic, and many other alternatives like support and such. Umbreon is very flexible in that regard.

Foul Play would rely on your opponent. It can be usefull, like when facing hyper offensive teams, but it can leave you hopeless against walls and stall teams. Don't discard the opportunity, but keep in mind the differences between both, and the fact you'll almost always will be hitting for 100 Base power with payback.

Still, you never know, I once killed a mega medicham with foul play at full health, it can work.

I don't like Sleep Talk because of its low reliability ("Umbreon used Rest; But it failed"), couldn't I use Wish instead and have another move slot left? Umbreon seems tanky enough to afford waiting a turn for recovery.

Sorry if those are stupid questions, I'm not very good at competitive battles.

If you want a fully offensive umbreon you'd have better luck with moonlight than wish, since moonlight is instantaneous. The thing with rest is that it heals status too. Getting hit with will-o-sip or toxic will render the whole set useless, since you wont be able to set up. Rest allows you to heal up AND remove status, that way you can endure stall better and survive longer. Umbreon just isn't offensively strong enough not to set up, and if you're going to set up, you need some way of protecting yourself from status.
