I've been only using this for a little bit but already its helpful.
I live in a smaller town and the only place that has gyms and pokestops are all in one location thats surrounded by grass and flowers. Its really pretty, but im allergic to grass and typically could only play for a little bit before heading home with a headache and stressed sinus.
I found a nice place where Pikachu spawns but I just could never stay long enough to get more than one shot a day.

Think about it.. Unless you're with your phone glued to your hand all the time, you're mini spoofing already.
Going to work? Well, you sure put your phone away and then half an hour later you appear in a different location, half an hour away from your original spot (home, let's assume) so, why would spoofing be any different?
You just gotta give enough time to "travel" or bear the 10min/2hour ban if you're hopping continents and just can't wait.

However, is there a way to load the app in bluestacks or something and have the bot run it, so I can watch and monitor the actual game itself instead of just the log screen? Also, right after set up the bot just started going, I assume it's doing it based on my current desktop location or something?

No. You literally just have to wait it out. Its usually somewhere between 1-6 hours depending on how far away you jumped. You can check if you're still softbanned by trying to get items from pokestops. If you can't get any items, you're still banned.

I like Fake GPS better than Nox with wasd.
I usually roam around one area in specific, at least I don't move big distances, until I feel like I just don't need what spawns there.
I downloaded the apk for the paid version of Fake GPS and you are able to set locations as favorites, so I take the time first to check every pokestop, and when I'm there I add it to favorites list. Bonus points for places where you can reach more than one pokestop.
So. With a few clicks you can jump from pokestop to pokestop so I don't run out of pokeballs anymore.
The server won't say a thing, since pokestops are a block away one from the other, and if you are in a vehicle you can move that speed perfectly.
