For one, the TV that I watch isn't geared towards pre-adolescents who are attracted to funny noises and tired memes, which is what most of YouTube seems to be. And neither does TV beg me to "like" them or to head down to the comments to hang out with thirteen-year-olds who can't be bothered to write in complete sentences.

To be fair, I have seen tolerable people on YouTube. The problem is as soon as they start to gain in popularity, they turn into everything that's bad about it, as they need to pander to kiddie audiences and beg for subscribers. The way the medium is structured is simply not conducive to smart content.
