vanilite line in the Pokemon world predates ice cream, so it's not ice cream. You don't need to apply real world logic to the designs if you consider how cartoony most of them are either.

You are trying to apply real world logic (this pokemon looks like an ice cream cone, why would a pokemon look like food? It wouldn't survive!) to a world where ice cream was made in its image because of the popularity of it.
