Yes, just set it to 23:59 the night before Tuesday/Thursday/Saturday and let that minute tick over to midnight in-game.

Yes but you have to change the date to one day before at 11:59 and let the day roll over.
So that's Monday for the Tuesday contest and Friday for the Saturday one.
