Dark WAS a special type, actually, for some reason. Sylveon broke the pattern, though, because fairy didn't exist prior to the split and it's impossible to say it would be special because of what you stated. New eeveelutions could be any type.

Well for a fighting type eeveelution, designwise, I think it could be a mix between a jack rabbit and a kangaroo. Think about it, it would use its full power using its legs, and bounce on its tail occasionally. It might even strike a boxer's pose most cartoonists usually give kangaroos.
