IVs plus EVs plus nature add at least 103 points to a given stat. A Pokémon with base 71 in a stat doubles the actual stat points when you breed for IVs and nature and EV train it. Those mechanics make a tremendous difference.

Even if you just take IVs:
Since they can be maxed on every stat, that's a potential difference of 186 stat points overall. In Speed, a single point can make the difference between sweeping and getting swept. For Pokémon with low defenses or HP, a single point counts for a lot due to how defense works in Pokémon. Take Chansey:

0 IVs in defense:
0 Atk Garchomp Earthquake vs. 4 HP / 252+ Def Eviolite Chansey: 250-295 (38.9 - 45.9%) -- guaranteed 3HKO

31 IVs:
0 Atk Garchomp Earthquake vs. 4 HP / 252+ Def Eviolite Chansey: 178-211 (27.7 - 32.8%) -- guaranteed 4HKO

And even on Pokémon with more balanced defenses, 31 points in HP and defense can easily make the difference between a OHKO or 2HKO, especially if the opponent does not have those 31 extra points in their attack stat.

Like IVs or don't, but claiming that they don't have a significant impact on battles is just wrong.
