Im new to breeding and im trying to breed larvesta and venonat.
The venonat is holding destiny knot and has perfect ivs in everything except speed.
Larvesta has perfect ivs in hp atk and spatk

Ivs are assigned individual values for each stat. Ideally the highest value a stat can have is 31. Breeders shoot to have penta or preferably hexa perfect stats. This is discovered by taking the mon after being hatched to the iv checker. Using Destiny Knot on a well rounded penta/hexa mon has the ability to pass on up to 5 ivs from the parent. Using an everstone can pass on the nature of the mon. Using power items such as power anklet, power band, power belt, etc pass on the value that item boosts during training. For example the power anklet always passes down the spd stat.

When you take the mon to the iv checker you're looking to see him say that the pokemon has outstanding potential. The checker will list the best stat, and if it is described as 'can't be beat' then it's 31. The checker also lists of any other stats equal to the best stat. They are listed in order from hp to spd.

No IVs aren't the actual stats. They're background data that influences how stats are gained sans ev training. For example if you just rare candied the mon the 100. 31 is the highest value an iv can be via breeding.

EVs are effort values given for defeating mons. For every 4 EVs you get one additional IV. Every mon can get up to 510 EVs from battle and only 255 per stat.

Take it to Kiloude in X/Y or the Battle Resort in OrAs.
