Is the pokedex what lets you see lvls and stats ingame?
If so, is the pokedex the only thing enabling little kids like red to conquer whole regions?
Being able to see stats, locations and other important infos might be a really big adventage.

It's a.game mechanic, not something that's supposed to be in universe. JRPG characters don't see giant floating numbers when they hit a monster.

A better question is, why does the Pokedex list real life animal counterparts for Pokemon if real/regular animals don't seem to exist?
How the fuck do they know what a mouse or a dog is? Are the different rats/mice considered to be descendants of the first mouse Pokemon discovered?

Unlike a typical RPG, Pokémon is not really trying to be immersive. Most of the minor NPCs talk pretty much directly to you, the player, rather than just your character (remember the "Techology is amazing" fat guys). As such it should be assumed that levels are indeed a very real concept, probably even measurable without something sophisticated like a pokédex, simply by eye. Some trainers even openly talk about stuff like exp., others indirectly talk about EV/IVs, etc.
