Because more often than not if your pokemon isn't a glass cannon with a choice item or life orb and shit that 252 on the chosen attack stat and 252 on speed, you'll be wasting EVs.

You more than likely don't need 252 defense or on HP to survive the talonflame attack(or whatever pokemon you're running into a lot and are trying to check) and those EVs you can spare could be used on an attack stat that might help you score a OHKO on a popular Landurus set(again just an example).

Yeah, 252/252 is the safe "I don't really care about what I'm playing against" distribution, it isn't more often that not the optimal EVs.

I wish you were right. I really really do. I still do mixed EV Pokemon from time to time, because it let's them do creative/less predictable things. But unless its a mixed wall or mixed attacker, I always get better performances from 252/252 Pokemon. So many of the biggest threats are as evil as they are because of that max number being reached, speed in particular.
