I dont know for sure. It would be a lot easier for certain mons to survive potential OHKOs or 2HKOs, but stall teams would also be able to laugh at the extra hp (toxic, spikes, rocks etc doing %-based damage).
Not sure how the numbers work on blissey and company but i would imagine you would still take a +def nature seeing as your HP is so high in the first place

yeah, at a certain point, defense is better than more HP.
in some cases like say, dragalge though it might be a lifesaver.

It would be a godsend.
That's a stupid change. By increasing your HP by 10% you're effectively increasing both your physical and special defenses by such, so you're completely invalidating both +defense natures.

It is. The exact damage done is almost exactly inversely proportional to target's defense, so your physical/special bulk is simply HP * corresponding defense. Any HP multiplication is going to be equivalent to multiplication of both your defenses. Base stats and EVs don't work that way because they add point instead of multiplying them, but that's a different matter altogether.
