No, they've stayed true to them /so far/. There is no reason they won't do something different in future. Every generation breaks a previous 'pattern'.

And Eeveelutions were never part of /any/ pattern.

1st gen Evolutionary Stones were a different kind of evolution. Trading an Eevee wouldn't make sense in the sense of evolution.
2nd gen Day and Night give the game a different feel and are used to emphasize the difference in the game. Evolution in specific times of day make people play the game more.
3rd gen Only introduced diving, we already have a water type so no eeveelution. Weather was also added but at the cost of time.
4th gen Bigger emphasis on environment. Blizzards are introduced and forests have more depth in them. Caves have more turnarounds and there is a bigger sense of exploration.
5th gen introduced triple battles, but having a Pokemon evolve in a specific battle would be pointless since it comes up so few, same for sky battles. Both sets of games had a focus on ice due to Kyurem but we already had an ice type.
6th gen introduced fairy, which is a new type that completely reformatted the games type differences and retyped previous pokes. Amie was added for people to spend more time with pokemon and super training was meant to casualize the competitive setting.

If I had to guess what 7th gen would introduce it would probably be a new way to travel similar to the eon flute in xy. Which would turn pokemon into a gba dbz game. If I had to guess what eeveelution would be next I would have to guess either ground or poison, but they would have to add a feature to make them work. The reason why we don't have lutions of all types is because they don't want to overload the game with hamfisted settings. People would react negatively and it would probably turn into the next 5th gen. if you are going to argue about eeveelutions, at least provide a logical explanation as to why it would even be plausible to attempt it.
