WW1 is widely associated with depressing levels of suffering and wastes of life. It's hard to point at one side or the other and say "those guys are the EVIL ones, we need to defeat them!"
WW2, on the other hand, is more commonly seen as having one side that is heinously evil. It's much easier to build a game in which you can play as a heroic Allied protagonist fighting an unambiguous evil.
That, and trench warfare is a little trickier to represent even vaguely accurately while maintaining any serious level of fun.
