I can only comment on Mobius because I haven't tried the other two. It's a fun farming game to pass the time either at work or during the boring parts of other games (When I played Tomb Raider 2013 recently I played many scripted parts with one hand while playing Mobius with the other). The point of farming/grinding is to develop your spells/abilities so that you have good decks that play well with whatever jobs you have. Every job has different strengths, so a big part of the game is coming up with different builds for different situations, and finishing those builds is always a long-term goal.

High-level activities like battle towers and chaos vortex require some interesting strategy, mostly around making the turn system work in your favor, but you can pretty much have battles play themselves 90% of the time so it's really a game about making wise use of your precious resources. It's not for everyone but I encourage you to give it a try.

Squall is great and will be for a long time. Lightning is also great but in different ways. The two jobs have different elemental enhancements, and the Squall job has more crit potential while the Lightning job is much better at breaking. I'd be very happy to have either one, and the Fang card from the XIII event is going to be very powerful with Squall.

Unless the enemy's wind resistance is higher than its ice resistance, yes. Multi element moves will always pick the element that does the most damage.

Outside of extremely rare circumstances you can just look at how many stats are debuffed/buffed and see if they stack or not. And which specific stats of course

Regular breaks - 1 stat. wont stack with other 1 stats of that type
Double breaks - 2 stats, stack with 1 breaks, tribreaks, full breaks, etc Right now these are mostly sbs and some of the 20/20 bsb commands and mug bloodlust. But dancer gets some double breakdowns down the line. Any double stacks iwth other doubles as well as long as they dont overlap. Sosay Vaan bsb entry, mug bloodlust and one of tyro's bsb commands I think should all stack.
Tri breaks - I can't think of any but Faris usb2. stacks with everything.
Full break - 4 stats, stacks with everything. full break sbs are usually breakdowns, while the skill and dance are 30%. Some sbs are 40% and others 50% because ?
Hyper break - 5 stats, stacks with everything below it
