Play it vanilla first to truly understand just how bland it is on its own, then go nuts with addons.

Weapons packs if vanilla shooters aren't your thing, outfit addon it you want more suit variety, dynamic faction relationships if you enjoy being memed on, Warfare if you want there being at least 50 dudes in one place at all times and so on.

There's an addon currently in beta that adds artefact cooking and thousands of potential artifacts (and compensates it by making all of them worthless and giving them shit stats) and if the base game gets too easy you can always try out Call of Misery.

Difference is, the games themselves actually have an end goal and lots of potential sidequests. CoC's story mode is just "go to every underground level and find documents because you wouldn't visit them otherwise" and all of the sidequests are pretty much identical "bring me x amount of this" or "go there and kill everyone".
The fight in the Sarcophagus was pretty neat the first time though

I want to get back into SoC. I haven't played it in years and I played it completely vanilla back in the day.

I have read through the OP guides and I'm running into a small issue regarding the PhotoRealisticZone mod since the install translation is awful and confusing.

The creatures pack had a gamedata folder so I just overwrote my existing gamedata folder without issues. However the environments pack is just a bunch of raw texture folders. Do I just drag those into the textures folder in game data and overwrite the texture file from the creatures pack?
