Even though eve is touted as a deep game with a steep learning curve it uncannily manages to attract total retards, so it's "easy" enough for the average player. Your best bet is to just toss caution to the wind and join a new player focused corporation from the start, like karmafleet or something. Once you can fit Miner IIs on your Venture it goes a lot faster but unless you're talking about the mining missions that are part of the career agents you really shouldn't be doing mining missions. They end up paying less than just actually mining.

The meta mining lasers will be your best bet until you can fit Miner IIs and having a mining laser upgrade in your low slot will also increase your yield by about 5%. Is it possible/viable to use skill extractors from one character to give that SP to another of my characters?

I have a old "main" that I never use anymore, but has like 60m SP, my current character has 25m SP and is far more focussed, havnt touched the old one in ages. Can I leech some SP of it?

It always takes 500,000 SP to fill a skill extractor, turning it into a skill injector, but your 25m SP character will only get 400,000 SP per skill injector so you'll be losing 100,000 SP per injector plus the cost of the extractor. It's up to you whether or not that's worth it.
