It's because what they're based on (Fomorians of Celtic myth) aren't done as often in fantasy settings and the Fimir were specifically created to be an original race that wasn't tied to Tolkien or real-world history. But due to certain misfortunes - their models being monster sized but their stats being human level - no one bought them because they weren't viable. Add that on top of their earliest defining traits being rape (Beastmen had this too but it's easier to just accept them as random animal men) and GW just stayed away from using them.

It's jut a really neat throwback and legitimately distinct from other races.

Fimir were shot, killed and buried by GW which wanted to forget whole rape-for-mates ordeal but never bothered retconning them. In the lore the Chaos Dwarves are always gearing up to expand their territories into a global force, but are constantly being hindered by their Dwarf cousins, low population numbers, and their own ruinous experiments gone wrong (like inventing the black orcs such as Grimgor as a race of super soldiers who later rebelled.

Bloodknights are your go to cav unit as VC, supplement your infantry with monsters they get armor piercing for a reason, Varghulfs are beasts when supported and Terrorgeists wreak havoc, Vargheists is your other answer to range units and artillery. I'm pretty new to the Total War series as a whole, but I've played a little bit of Napoleon a while back.

Unlike older TW games each faction actually has unique units with different specializations. Some factions have amazing infantry (Dwarfs) and some have amazing cavalry (Empire/Bretonnia) and some sacrifice those for monsters/ranged units.

Part of playing the campaign is realizing these strengths and weaknesses for each faction. Since you said you're going against the Vamps, try and get anti-large infantry like Halbrediers and Spearmen to counter any monsters they have, and good cavalry to counter their infantry.
