She does not have any reservations on killing, and she sees it as a heroic act that will save everyone she loves. While she's in a way correct, you can tell she'snot the kind of person who's killed before. She's far too exuberant and doesn't seem to realize what it actually means to take a life. Maybe its just Toby being a hack again, but Undyne does not come off as someone who has had that experience. Let's not forget that while monsters just fare into dust, dead human eyes still stare at you, and human blood still flows. As courageous as Undyne is, I don't see her coming away from that as the same person again. She wouldn't be the same ebullient, energetic and enthusiastic person anymore, She would be much more sober and serious. Now, that wouldn't by itself eradicate her desire for freedom or her justifications for killing, but she would definitely take things a lot more seriously than anime-esque, heroic antics. Plus, isn't it stated that it's been a very long time since the sixth human fell? Undyne does not seem very old. I doubt she was even around when the sixth soul was taken.

It's canon that Undyne's never killed a human before, but it's possible she may have killed criminal monsters as part of her job. That's highly unlikely though. Undyne is so powerful she's in a league of her own, and her green attack is perfect for non-lethal takedowns.

And if I may add one more addendum, I can tell you right now that people with a duty to kill and have taken life end up one of two ways. They either return from the field much more sober, and they respect the value of life a lot more, as they know what it means to take it, or they come back as callous sociopaths with little remaining reverence for life, as they've seen it snuffed out enough that the effect has worn off, and they just don't care anymore. I've seen bot myself. The latter would stick glowsticks in blown off heads and laugh near blown apart corpses while the former would just stay quiet and never talk about their military life again, and if they ever do, they're very succinct about it.

He says human souls can persevere after death due to their determination. This at the very least seems unsupported, maybe even outright wrong. Undyne has plenty of determination and it doesn't help her soul persist. Boss monsters are never said to have a lot of determination, I think.
He says a lot of the story is hidden in the mechanics. I disagree, I think that the mechanics are where the story is at its weakest, just so the game can work. But let's go with it for now.
He says Flowey can create and load save states, like an emulator. That's just plain wrong. They're regular save files.
He says you have to sever Flowey's connection to the souls. That's not right either, you have to get them to rebel. Minor mistake, but annoying.
Next he goes completely off the rails by trying to tie the hidden defense statistic of the Flowey boss fight into the lore. That's ignoring that such a hidden variable would be adjusted for game balance, not for lore. The statistics that are shown to the player and the internal statistics don't even reliably match up in the fights where they're visible in the first place.
He can't find the value he's looking for anywhere, and instead tries to fit a function to the damage you see in game, which is surprisingly sensible and the closest thing to "science" I've ever seen from him (although he assumes it's exponential for some reason?), but he seems to be unaware that there are actual decompiled dumps of the source code? It shouldn't be hard for him to get his hands on one of those, or ask someone who has one to take a look for him. Fuck, I know someone with extensive Gamemaker and general programming experience who's really into Undertale theorizing, and I'm just an anonymous shitposter.

He arrives at 7.687 human soul equivalents (which has way too many significant digits, as many a high schooler could tell you), recalls that all monster souls together equal around one human soul, and concludes that... there are monsters who absorbed human souls.
He favorably judges monsters' fighting capabilities by their ability to be a challenge to a young kid who fell down a hole.
He says that seven mages were needed to create the barrier because that would outweigh the human souls absorbed by the monsters. That ignores that seven is a powerful number of souls in its own right - there's a profound difference between Flowey + 6 HSE and Flowey + 7 HSE that's unrelated to the barrier. Seven human souls makes you like a god.
His "theory" really breaks down because the power of a human and a monster soul is enough to pass through the barrier (although without breaking it). The barrier would be fucking useless against the most dangerous monsters it was supposed to lock away.
This is not obscure information. It's mandatory dialogue. It's also spelled out in the first three sentences of the Undertale Wiki article about souls.
What a waste of time.
