Six man Co-op would RUIN DaS3. The game can barely handle fighting 3 dudes. And considering how BB's dungeons are so boring, I don't put a lot of faith in them being better in DaS3. Besides, spelunking's only fun if there's sweet shit to find, and the SoulsBorne series is pretty lacking in items that are worth the hassle.
Granted, it doesn't help that I view the SoulsBorne series as primarily single player games. Any "online only" situations just annoy me.

Absolutely. The first book, Gardens of the Moon, isn't exactly the most complex thing in the world (it was originally written as a screenplay), but its a solid fantasy tale about different factions converging on a city. Its well done high fantasy that feels very much like something out of a Greek myth (with gods existing and mortals just trying to stay out of their way), and the magic system is awesome. The second book, Deadhouse Gates, is amazing and the rest of the series is a similar level of quality, with a couple of dips and spikes.
I should tell you that this attached image is how the story essentially starts, and it is awesome. So yeah, read Gardens of the Moon, see how you like it, and know that the quality ramps up hardcore in book 2.
