They did a very long time ago. Including craft essences and whatever else.
But main reason it doesn't is because no one is going to update their entries every single day. Info such as levels would become outdated in mere days and if the info is inaccurate there's no point to it. The second reason is space. You used to only have 1 support per player, but it's a bigger list these days.

It's something you'll understand after you play enough.

You have to keep in mind they fill two completely different roles. Waver is 10/10 because of his amazing skills and his plug and play style, can fit anywhere and make anyone else strong, while he himself is weak in terms of damage, he's an irreplaceable support servant. Herc is a 10/10 among the 4* due to his survivability and okayish damage, and at times can be better than other 5* Berserker, but in general they are better than him.

There are other cases such as 3* Robin who can do some amazing damage with his NP that 4* and 5* can't even match, but in terms of card damage those 4 and 5 are still better than him.

Herc only becomes a true 10.0 Servant when you max him, give him his Bond CE, and you put him on the field solo so that he can use Brave Buster Chains nonstop. He's a rare and bizarre example of a Servant that is strongest on his own, not with any support whatsoever because adding in supports just ruins the composition of his cards.

You can edit your own entries though. It's literally explained in the header of the form.
I got rid of open spreadsheet where you can lock your rows because it was a massive clusterfuck fixing tens of tiny errors every day since a lot of people have no idea how to use spreadsheets and a lot of conflicts happened when so many people use them. Not to mention easy vandalism. Now it's tied to submitted responses, which takes like 3 seconds to manage or organize.

Some info so you can stop asking the same fucking questions over and over:

-Jannu is extremely useful early on, she'll become completely irrelevant for a long while, and then get an update that makes her kind useful gain (but never as good as at the start)
-All the 5* Sabers are okay units but mediocre and samey. Differences amount to slight but ultimately trivial damage output.
-Siegfried is shit. He got some updates recently but he's still mostly shit.
-d'Eon is tanky but not much more and his NP does precisely jack fucking shit.
-Caesar is single target, meaning that yes, he'll end up being more useful than Lily.
-Emiya is a pretty good unit after updates. Right now he's shit.
-Atalanta is meh.
-Robin is the best offensive Archer you can get right now. In fact, he'll remain a great unit forever.
-Elizabeth is meh, even after her update.
-Cu is the best Lancer right now. yes, even better than Liz.
-Marie is tanky even if she has no taunt, but not much more than that.
-Martha eventually gets some upgrades that make her a sometimes-useful support unit, but she's shit right now.
-Ushiwakamaru is the best Rider right now.
-Waver is extremely useful forever, even if Merlin kinda steals his thunder eventually.
-Medea is the best offensive Caster. That doesn't mean she's a good offensive unit, but she's likely going to be the best offensive Caster you'll ever get until Sanzou gets introduced. Not that Sanzou is spectacular either, offensive Casters are all shit, it's just everyone else is far, FAR worse.
-Andersen is deceptively great for a 2*.
-Stheno is one of if not the worst gold Servant in the game.
-Carmilla is nice enough once she gets her updates. Right now she's okayish.

He'll be capable of carrying you once you get him leveled and you get him all three of his skills. The Bond CE isn't entirely necessary, a good CE that boosts Busters is also quite effective on him.
