Double notes give you an "encore". If you play your recital with all double notes, it will include the last song you played as well.

Maestro makes your songs last longer. I think an extra minute.

Some songs only extend, some songs extend and get a bit better. The song notification makes it pretty obvious what's happening.

From what we've seen of MHW, what are the changes you guys are most excited about? For me it's the directional change during gs charge animation and the attention to details like how the weapon isn't automatically sheathed when a monster roars.

There is. Like they have said before, they want MHW to provide more feedback to the player, so instead of the previous "hold side direction but don't see your hunter move while charging, then move comes out at an angle when you release instead", it's now "hold side direction so you can see the angle change in realtime while holding down charge, so you know the exact angle when it's released". HH gets the least DPS of any weapon in the games. Seriously, it's slow, doesn't do as good KO/stun damage as hammer, you have to play songs like every thirty seconds, and it's moveset is really goddamn unwieldy.
