The only reason why you would lose a fight to a Mage as a Paladin is because this server is packed and more than likely you won't be facing one alone. The moment you start going at it someone else is going to jump in and slap your shit.

In a 1v1 duel assuming equal or similar level gear a Mage WILL lose to a Paladin simply because the Mage has to burn through about 4 lives (5 with LoH). Doesn't matter how good you are at kiting, Engineering makes it impossible to reset the fight over and over and take quick sippy breaks. The Paladin will catch you and autoattack you to death.

OR the Mage flees which in any case is a win. He runs off like a bitch and you can go back to farming or whatever.

If you're talking about class balance as in how classes are balanced against each other, then druids are considered S-tier, hunters and warlocks are considered A-tier, and nothing else matters. If you're talking about how balanced a class is within itself, then yes, a healer can have PvP utility. If you're asking whether a class can heal and do damage in PvP, that's also a yes, since Shockadins became a thing, so even paladins could do something.

First I would like to say I am not a warmane fanboy what so ever (was rather Hellfire/L4G fan), and I did check out Gummy's server and it looks fantastic. This topic is not about the quality (which is great) of the server, or its impact on other famous (looks at warmane) servers and TBC scene.
I have great worry about the server and its honesty. First of all for people who do not know, lets explain honeypot is shortly: (skip if you know what it is) Honeypoting is when a company or network owner sets up an environment that looks like legit place to do the unwanted or illegal act, but actually it is the trap to catch the people who does this unwanted or illegal thing. Most famous example are torrent sites which look like most trusted and known ones, mostly that come up first at google searches, but actually they are websites made by the owners of the illegally shared files to check who is downloading them. Or bittorrent look-a-like programs which are actually fake ones that lets you download the torrent but actually notify people of what are you downloading and who are you.
How can a WoW server be a honeypot?
The easiest way is that your ISP logs information about where do you connect, and incase the Blizzard asks it in court, %99 chance your ISP will provide them with everyone who ever connected to the IP of the server. Second way is also WoW servers log which IP connects to their server obviously all the time (without that IP ban would be impossible) and they may be ordered to hand over this information.
Generally speaking, it looks like only bad outcome from this would be termination of the players original WoW account, yet this is nothing we actually have experience with, so we have no idea how far lawyers can push this. And remember they are billions dollar worth company level lawyers.
So why do I think it is highly possible Burning-Crusade server will be a honeypot:

1 ) The change of private server scene, and the possible change of focus of Act.Blizz: Private servers exists for WoW since 2004. Meaning for last 13 years. But till last few years, the scene was based on big server providers. So while in Europe we can say there will be laws and lawyers to protect the players and cause blizz hardship when reaching to players, in USA we can easily say that this wont be a big problem.

So lets get this str8: - You are releasing a private wow server, which is illegal. - You are saying it will be strictly non-profit. - You are working on it for years, and obv want it to be long-lived, so better it is the more under the radar you are. But then you lunch a tbc-database, which does exactly opposite of that. The 2 really hyped servers, warmane and PlayTBC -we found out- were for-profit, so they were understandable. Even not-so-much-for-profit Hellground got shutdown right after lunch as it was kinda hyped. So why do someone who should want to stay under the radar, lunched a database which attracts thousands people, and a website which is literally same as the copyrighted material?

There is no chance of that, full stop. Retail subs for EU/US are hovering around 1.5m, possibly less. The very last thing blizz needs is negative PR from something like that, and every major videogame newssite/blog/etc would be covering something as dramatic as that. Especially since the nost shut down and nost/blizz meeting got so much attention last year.

I can't speak to anything about shutting down gummy, but the possibility of blizzard going after players accessing a private server is nonexistant.

Is there a summary of changes gummy has made regarding spells and class abilities?
I know most things are based around 2.4.3 but i've also read there are some modifications - some just based on what feels right or whatever, which fine but a little vague.
One thing I've noticed while researching old forum posts/guides/etc is that a lot of things that worked well early or mid tbc weren't the same at 2.4.3. Like for example you could argue with someone who played retail who would say that rogues aren't top dps until late, but someone who has played on private servers would contest that.

I guess my long question is how do I know what's what for gummycraft?
I did play retail tbc but it's obviously been years so i don't remember things 100% correctly, plus some vanilla stuff gets mixed in with those recollections.
As an example, I was a horde hpaladin, and remember still considering ret to be retlol (even tho it was totally fine for heroics, especially on private servers now) and I know lots of others shared that view, either due to misinfo, misunderstanding, or carryover feelings from vanilla.
