Well, so far the biggest downside of playing at 200% is that the spelunker potions are less effective. Exploration of caves, on the other hand, is greatly improved since you don't know what is beneath you.

Tips for the Solar Pillar and Moon Lord?
I had zero difficulty with the other pillars since I got the Cosmic Car Key
I basically was flying in circles and spamming my Stormbow/Phantasm (once I got it)
I know those centipede fuckers murder you if you fly but I got fucked by the Corites when I couldn't fly to dodge them
My Pillar spawned in a desert/Crimson area to the left of my spawn (pic related, in the yellow/green circle) so I bunkers won't work

Especially Flairon. You can suitably go as high as the peak of the Solar Pillar without much hassle.
If the Solar Pillar is actually in that crevice, then I'd suggest making a few carpet-bombing runs of Dynamite to even the land a bit just to the left and right.

How the fuck do you do the Dungeon Defenders event?

I'm in pre-hardmode, playing as a mage. I'm using the waterbolt and diamond staff. I've managed to get the aura sentry as well as the ballista. None of it helps. I just keep getting overwhelmed by those fucking wyverns.

Git gud. If I remember correctly, I used mostly the fire staff and then lots of dart traps. Even in hardmode, the dart traps help a lot. Break into the jungle temple if you want the really good stuff. If you want to just kil everything and barely move a finger, get a flame trap and put them near the portals, shooting away from the diamond. IT has very good damage and the knockback will make the enemies take longer to get to you.

Yes, for both. I've always cheesed the solar pillar with chlorophyte bullets. The crawltipede banner is the first solar pillar banner I always get. If you fly high enough, you will only have to deal with those, and the homing projectiles will take care of them really quickly.

Here's my setup:
100 blocks to each side of the altar
only use flameburst rod and place one sentry on each side of the alters, right near it, try to keep both sides with the same amount of sentries
two imps

And that's pretty much it. When the last wave comes, focus on the summoner that will spawn on the left side of the arena.

Even if you make this arena wider, the portals won't spawn any further from the crystal. It will also not work if the crystal is placed any higher than that. Now it's time to put the traps in place.

Small scale helps. Just try to cram as many details into the space as possible. Pick blocks/walls that look nice together. Also try slightly irregular shapes for room layouts in a single building, like the one on the right in pic.

The building on the left is the one I first made after creating the world, but have gutted most of it and will be converting the lower portion to an overgrown/living wood area for the dryad.
