It looks too float for a sword of that size, but I wouldn't mind non-shouldered animations for regular looking U/GSs like the Claymore and Astora.

Maybe contextual animations so that it all smoothly flows together. Stopping after a downward swing will have your sword rest like pic-related. Stopping after an upward swing will have the sword come to rest on the shoulder like standard.

I used to run with a O&U hollow/bleed build which was awesome since I could kill phantoms in one combo. Now that's been nerfed I'm not sure whether to switch to an ultra build or some kind of hornet ring/crow quills one-shot build.

So I've discovered giving myself the dark suicide bomb with Crucifix and then 2handing my blessed caestus for perseverance. You can run up to someone, smack em, and eat the blast without staggering whilst they take huge damage and get floored.
This has served me with surprisingly huge success.

Take a weapon which is straightsword speed or faster. Get outside their dagger range and wait for the Quickstep. As soon as you see the Quickstep in, you react with R1.
If they Quickstep into an attack, you'll either beat them clean or trade in your favour.
If they Quickstep again to avoid your attack, you R1 again on reaction to the 2nd Quickstep. Don't mash R1, if you hit the button too fast your 2nd swing will be too early, confirm each press after you see the step.
If they just keep on Quickstepping 3-4-5 times, roll out before you go out of stamina, and don't go too far away because they'll eventually need to Ash Estus for mana.
