id say that your chances of running it are pretty good.
not only is dolphin one of if not the best emulator on the market next to PPSSPP with unbelievable on the developer's part on accuracy, features, and optimization, but AC is probably one of the most easily emulable games as well. Since AC is more or less a port of Animal Forest on the N64 with a few changes here and there, I'd say if you can emulate N64 consistently well, AC won't be a problem for you.
As for the texture pack itself, VRAM will play the biggest role, but it still shouldn't be a problem.
If you want, you can download Dolphin and the iso of AC and see how it runs for you. The file size is relatively small.

Of course then there is the Ishiiruka fork of dolphin which has lots of goodies in terms of visual features that allow stuff like this to be possible.

traveling backwards always counts as one day forward, no matter how much time you go back.
