Regarding Skyrim economy, you might want some gold sinks if you haven't already. In addition to Trade and Barter mod, I use Simple Taxes (Horse and house taxes, and followers upkeep), Skyrim Wayshrines/SWIFT (Wayshrine fast travel uses souls, I buy soulgems for them), Honed Metal (Buying new armors and weapons instead of using ones you get from looting).

I'm about to play Morrowind for the first time and since I've got a mac, it seems like my best bet.

First time ever should mostly be vanilla. There are official bethesda addons to get, they're listed in uesp and guides like guideanon have reccomendations of which are worth it or not.
It is still a bethesda game, if not on the same engine, so bugfix mods are nice. Patch project to fix some vanilla bugs, a mod to delay the darkbrotherhood so you don't die level 1, maybe one for solstheim rumor fix. They should work fine with openmw but I'm not 100% sure. Maybe someone else knows more specifically and/or would have more/better reccomendations.
Don't add too much the first time or you won't enjoy what the mods add. It's not like skyrim where you need 50 mods to add back what they removed from previous games, it is the previous game.

Well, Proudspire Marketplace won't CTD you with Solitude Reborn like I originally thought.

Instead it breaks the navmesh for all the kids and modded in NPCs from Reborn. They're all stuck in place. Shame too, it turned Proudspire into something useful.

The waifu it adds had fucking brownface. I really hope it was due to lack of mipmaps.
