Well Princess/Hoplite is okay if you lack a Hoplite because they are fairly tanky for the most part although you end up losing some valuable skill points better spent on other skills. Zodiac/Monk is just plain mediocre because a Monk heals so much better it's not even a contest, although Zodiac/Monk spamming Breakfire Fist is a pretty fun end-game build. Ninja/Hoplite is just useless.

The sub should support the primary job of the main, or in a couple cases vise versa.

A classic example would be A/G. Arbalists are all about raw damage, and giving them Berserker Vow and Charge makes them even more devastating while (in the case of Vow) accentuating their glass cannon characteristics. Similarly, G/A using Front Mortar would be an example of a main supporting the sub, since G's natural Vit makes them sturdy enough to stay on the front line unguarded. Another brief example of a decent pairing would be a S/N that takes the Ninja evasion skills to offset the horrid defense of a dual-wielding Shogun and has the option of Kubikiri on a 2-hit normal attack.

If you want to come up with your own main/sub pairs, just look for skills between classes that would accentuate the strength or cover the weakness of each other if given to the same character. If you're looking for well-used combos there are guides out there that list all the tried and true favorites.
