There's tons of story, with characters and plot development and all that good shit. But it's almost entirely optional. The game gives you a main quest line that leads you through all of it, but you can also just run right to the end and challenge it if you want. This takes place over ten thousand years after Zelda 2 in the Downfall timeline. At some point after Zelda 2, Ganon was revived, laid waste to Hyrule, and the Sheikah, Link, and Zelda fought him and sealed him in Hyrule Castle as they couldn't defeat him outright.

The King at that time was terrified of the war he witnessed and exiled the Sheikah who created the war machines that laid waste to Ganon's army and followers, burying the machines.

A hundred years before Breath of the Wild, Ganon broke out of his seal. He took control of the Guardians and Divine beasts and obliterated Hyrule. Link, the four champions, the King of Hyrule, and almost everybody who existed was killed. Link was barely saved by Zelda, who left to fight Ganon alone. She managed to seal him using a single long wish on the Triforce for over a hundred years.

Nothing of Ganondorf is left at the start of Breath of the Wild. He is pure Malice. In sealing Ganon, Zelda became a part of him. She is pretty heavily dead before the story begins, but she's been inside of him, keeping him from growing too powerful too fast.

Castle is nearly entirely spoiler free. The bosses themselves are the closest to a spoiler that has been seen. And they wanted people to take in as much of the story as they wanted, in whatever order they wanted, instead of creating a giant linear plot that carts Link from one place to the next, they tell you to go to a bunch of places and let you decide which ones you'll go to and when you'll do it.
There's an alternate ending, presumably the difference between beating the final dungeon without doing the others, and actually doing the whole story.

In order to beat the game, anon, you have to fight four super bosses, two forms of Ganon with three phases each. If you can do that with bare minimum equipment that's fine.

Before you are allowed off the plateau, the dead King of Hyrule tells you to go kill Ganon, but acknowledges you'll probably die. Before this he gives you an info dump. You learn a little of the story, but not all of it.

This means nothing. Ocarina of Time is the unified timeline.

Skyward Sword is the first, then there's a couple games, then Ocarina of Time happens.

Ocarina of Time splits the timeline in three:
One for the Hyrule that he defeats Ganon in as an adult, one for the Hyrule he returns to as a child, and one for the Hyrule that exists if Link loses to Ganon in Ocarina of Time. The one where he loses is the downfall timeline.

In the downfall timeline, Ganon is sealed, reborn, and killed multiple times as he was able to claim the whole Triforce. It's eventually taken back by the Royal Family who rule for thousands of years of peace and prosperity, using the Triforce to keep everybody happy and balanced.

Then the King has a dickbag of an heir. He decides to give Zelda the Triforce instead, and this pisses off the kid and Zelda 2: The Adventure of Link happens. Untold time passes, and then Ganon is revived as a giant hate monster. The Sheikah, Link, and Zelda seal Ganon in Hyrule Castle, where he remains for ten thousand years.

Then, one hundred years before Breath of the Wild, he breaks out and you know the rest.

That's as clear as I can make it. The answer to most of your questions is "ten thousand years is a long ass time."
