You're supposed to drink your Estus in order to survive. You just need to remember that you're still taking damage during the Estus animation, so you need to sip early and regularly.

Also, just block-run in a straight line in the lava pool where you kill Tsorig. There's some kind of glitch that makes it deal the lava damage to your shield and stamina as long as you don't change movement direction, so you can get to an item scot-free and then save your Estus for the trip back.

Rather than specifying a specfic level for taking on Ashes of Ariandel, anon, I can make a better suggestion:

Get at least 27 vigor. This gets you around 1300 health embered, which is enough to survive the last boss' most damaging combos, assuming medium armor (~20% absorption)

Be able to do at least 1000 damage in five hits or two to three spell casts.

if you use shields to block very often, it would be very wise to have significant investment in Endurance. I suggest a minimum of at least 30.

Having your estus flasks fully upgraded is also highly recommended. 12 count and 8 power can work, too.

Ds2 is your choice, the three dlcs are good, each NG+ is different, PvP is less cringey, the main problem is that you shall be alone since nobody plays it rn.

SotFS has the most raw content. It also has rewards for no death/no bonfire runs and a PVE covenant that increases difficulty.

If you consider PVP to be content, then DS3 will likely be the most active.

you only really need to level equipload until it's high enough that you can be 69% weight with the weapon/armor you want to use
but it's still viable to just leave it at the base level and run around naked all the time. armor is more relevant than in ds3 but it's not incredibly important

Is the Dark Souls 3 DLC worth it?

das2 has no hard breakpoints, it's just slowly increasing stamina regen speed and roll distance the lower weight you are -- notably, iframes are the same at 0% or 70%

you can do just fine in pvp and through the whole game running around practically naked
(bestfashion is flower skirt + noshirt + bell or onion hat, of course)

if you really want to meme it up with max poise full havels and whatnot, go ahead, but leveling your equipload enough to be 50% weight in that is a huge stat expenditure that's not really worth it
