If he hit you before doing it, you're fucked and will take a light attack, if you're against a wall when he does it you're fucked until your back stops hitting a wall or he runs out of stamina. The timing to dodge it is some shit. Dodging back in general seems to give any attack or guardbreak a lunge for the enemy.

What do you lot recommend doing against completely defensive players? I was fighting some guy earlier and he could tech all my guard breaks well and parrying all my attacks and following with guard breaks, but he never went on the offensive himself.

Not really, I'd argue something like warden is FAR easier. It's just they have tools (Mobility, counters, zoning) That frustrate casuals but are relatively simple to counter. They're strong characters sure, but your average Orochi spamming overheads doesn't get 1/10th of the depth of the character.
