It has a lot to do with managing cool downs and ultimate economy. Choosing when to bubble as Zarya is a good example. Buddy would bubble a support and himself while starting an engagement, meaning he got left with like 10 charge and no counter to a hook.

If you read the patch notes and have played Bastion before you'd know he could do that even before that patch. Now his recon mode doesn't go to shit after few shots so he can actually do something.

Turret mode is still up to debate. Removal of headshots and massively increased spread will useless against targets smaller than Roadhog but the decreased transform speed, extra rounds and damage reduction could result in some cheeky tactics that we don't know yet.

The Sentry changes definitely kill his ability to take out anyone smaller than the tank characters, and since he could melt shields and barriers like nothing beforehand it's not much of a change for that, except the 50% more rounds letting you lay a longer stream against shields. Sentry survivability will be a lot greater now, though, especially with healing while under attack and the damage reduction.

Basically you'll be Sentry when tanks are afoot and Config when you have to go mano a mano.

How do I Genji?
All the other DPS are pretty straight forward but I've been trying to learn Genji and most of the time I feel I'm not doing shit.
The fact that his shurikens don't have falloff makes me think I should take advantage of that, but at the same time I always see other Genjis trying to fight up close.
