No, because despite their fanciness, they're pretty fucking quick. The results screen in P5 masks a loading screen and the transition back into gameplay is really seamless and satisfying. Level ups aren't annoying since they're infrequent and when they do happen you're too satisfied with the fact you leveled up to care about the few extra seconds of results screen.
The all out attacks do get a tad repetitive, but not for the reason you're thinking - it's just you tend to see the same finishing portrait all the time since the protagonist is the one you'll be making the most use of due to the Wild Card, which means you'll see pic related more than any of the other finishers. I suppose that's no different from P3/4's result screen though, since they were portraits of the protagonist too and you saw them far more frequently than this.
Everything else is a godsend, the in game battles fly by, and are miles quicker than P4. And the menus are surprisingly functional and easy to use despite their flashiness.

all out attacks are the worst offenders, and really needed a fast forward button. I know it doesn't seem like it should but the thing is, the dungeons don't have much demon variety, so once you memorize their weaknesses and get personas/party compositions that can hit them constantly, it starts to drag. a lot of times I would use all out attacks to just rest my eyes for a good 5-6 seconds before getting back to dungeon crawling.

It does, but it doesn't really practice this in theory since every villain reformed just cries on tv about how they're a bad bad person and is locked up forever. Nobody actually makes up for anything they did beyond being stopped from committing more by force.

The only one that actually turns themself around is Sae who only needed an attitude adjustment and never actually did anything wrong.

The only person that actually makes up for wrongdoings is the Sun coop guy, who legitmately turned himself around after a career of political misdeeds but nobody would give him a chance until he changes his pitch from downplaying his former issues into embracing them as mistakes he's learned from.

That's exactly what that second line is about, though. It's because of Shidou that Goro was able to make his power useful, and we know exactly what that entailed (namely making him be his personal hitman for carrying out potential allies' requests in exchange for pledging their support to him).

That's not addressed in that line, but it's fairly clear how he felt about that from some of his scenes and what he says before his first boss fight. He tries to stall dealing with the rest of the PT until he can deal with Shidou instead, he has to justify what happened to most of his assigned targets to himself (including Wakaba), and he feels trapped by his past self/actions (and envies Joker as a result). He's also pretty shaken when Okumura's death by shellification actually gets broadcast, both when he sees it and a few days later at Leblanc (where he's outright spacey, unlike during every other visit).

Eh. Honestly I'm not really a fan.

I get it in SMT because it's about the world and the paths and a protagonist needs to be a blank slate so you have, for example a Demi Fiend that fucking hates his old friends and decides to join Lucifer and destroy the cycle of world creation, which would seem kind of strange of he was previously a guy that liked his human life and friends and such.

But in Persona, especially 3-5 there's only one story path, with a bad ending to get off early.

You are bonds man who loves all your friends. Even if you ignore S links you'll still defeat the final boss with the power of friendship while Igor tells you what incredible charisma and bonds you created even if you're only using the 1 or two story related ones. They might as well not even bother and just make protag an actual voiced character. They only don't because of SMT tradition, but in Persona it really wouldn't matter either way.
