A lot of people didn't like Gangrel, it was just a slow boil and that war caused it to erupt all over. Emmeryn's suicide was the last straw. Catching a glimpse of Robin also likely motivated Tharja. Regardless of Tharja's true motives it's kind of hard to blame her for defecting when it was pretty common sentiment among Plegian troops to begin with. Even Aversa and Validar disliked Gangrel and had their own agendas, similarly Gangrel didn't really care for the Grima worship.

I've yet to play Birthright but while both of them have the blood knight thing going on, Reina seems a lot more grounded and has a fondness for combat in general, but probably knows how to turn that shit off in non-combat situations. Peri cares less about battle itself and more about the stabbity stab, hence her casual torture and murder of servants until she was banned from having any of her own. This pretty much implies that the plot of FE7 had been conceived before Kaga left, way before FE6 was made. Likely the plot of the cancelled N64 game (along with the plot of FE6) was what eventually became TRS and FE7. Kaga did apparently leave because the N64 game was cancelled. Who's to say he didn't simply use notes that he likely had a big part in writing to make the plot of TRS? And that IS decided to scale down and do a pseudo reboot of Marth's story before using their old plot notes for FE7?
