CTF tips:
Rein can hold his shield up when he caps to make turret defense useless.
Winston bubble works similarly.
Zarya can shield whoever's capping the flag so they can't be hurt, this works really well with a Winston bubble because the other team has to walk into it and you can bubble then.
Winning team fights is still the best way to take the flag don't just think you have to try and sneak it out.
The best way to sneak a cap is wait for the enemy team to push to your flag then do a 5v6 while genji or tracer go and cap with nobody else there.

Japanese don't follow the Lunar Calendar and haven't since they stopped following a chinese based calendar system and follow a Georgian style system(same system we use) during Japan's Meiji period modernization in 1873. There is also a lot of bad-blood between Japanese and Chinese, and as such were probably excluded in this event to hopefully not cause any problems with Chinese gamers.

Characters like Junkrat is a widely known master criminal who has canonically been all over the world, including China, in order to steal/murder/main/destroy. It's not crazy to see him donning a bunch of Chinese rockets and speaking badly pronounced Mandarin like a tourist just trying to fit in.

Honestly, the only character that doesn't fit at all is Tracer, as she has no reason to be in China in the least, and is probably only dolled up for the event because she's the Face character and is kinda obligated to be included.

New game mode is absolute shit. I was no fan of the Winter brawl, but this is literally just a 6 minute count down to a 0-0 draw every single time. Flags are way too close to spawn so even if you get some picks they'll have red pawned by the time you've finished the rest of their team. Half the team camps the flag with Torb, Symmetra, Junkrat, or Roadhog etc, then the other half just plays death match essentially. What a pointless brawl.

Best way to get the 3-0 achievement is be team-oriented and aggressive. So long as your opponents are trying to solo the flag you can roll through their defense and then kill their flag-capper together on the way back.

Literally the worst event brawl they've made.
Every single game is a draw. If just 2 or 3 members of a team pick defence heroes and camp the flag, it's so close to their spawn, by the time you've wiped them out and had a chance to capture, they've respawned again and kill you. No one coordinates, the half of your team that isn't camping the flag is playing team death match. You'd need to be a coordinated 6 stack to consistently win this shit.
Further proof Blizzard does not play test anything they put out.

Hey guys Jeff here from the Overwatch team.

We got a lot of requests for a CTF style gammode, so we decided to create one for you for this event. We decided to place it on one of our smallest maps avaiable, instead of creating a new one, so that players don't get confused easly. *gulp*

We also got a lot of requests to fix Defensive heroes like Torbjorn or Bastion, so we decided to give them a little edge in this new mode, and put a 3 second timer on the flag capture, so you can safely work on improving your Bastion skill. *gulp* We didn't really wanted to focus on the "middle area battle", instead of the defensive strategies, because we don't want to take away the rewarding feeling of running back to your base with the flag. So because of this the heroes are still able to use their abilities, and just to make it even more rewarding, you can still cap even if your own flag is missing.
