It's generally advised to at least play, or try to play Genocide though, before trying to theorycraft or anything like that. I get the emotional connection and all, but it's still a significant part of the game that one should at least experience.

If you can't get past Undyne and/or Sans, that's totally fine, but at least give it a shot, it's a rather harrowing, though not terribly exciting route.

Gold keys are limited so use them with great caution because you won't have enough to open all the gold doors and you might be better off waiting to get better loot
Alchemists are A++ and fucking amazing. I would be fucked without my ratling one but then again I'm playing hard mode so maybe you don't need healing potions and bombs as much
Pure wizards are very meh imo. I wish I had rolled a battlemage or a second alchemist instead
unlike the first game you actually have a lot of stats so its okay to fuck around a little bit
