I'm playing morrowind and none paralyzation spells work on human targets, every time I cast a spell on them it says "target resisted magic". Would anyone know why that is and how I can use paralyzation spells effectivley?

It lets you transform and fly around and do magic, nothing all too amazing, but you're a skelly or a shriveled corpse like dragon priests depending on the potion you make and if you die you respawn at your phylactery. There's also a really nice mass reanimation spell.

There's a more recent mod that adds perks and stuff to it I believe, but I've not tried that yet. Need to do another playthrough with it in my load order, but I think I'll need to make a new character. I've settled on Johrin being a werewolf.

Not at all in my experience. I have it installed all the time for its armors and weapons and such. One thing though, do NOT generate LODs for its worldspaces with Dyndolod if you use that.

Removing mods can be dangerous but I doubt Inferno will break you're game. All in all it depends on what you remove. Best bet is to go into a vanilla interior and save, remove the mod, load up said save and save again. Download Skyrim Save Tool and remove any loose scripts and such it leaves behind.

Dreamborn Isle is colourful and chipper, have yet to play it yet so I cant confirm on how good it is. Lost Wonders of Mzark and The Wheels of Lull have alot of colorful areas. Moonpath to Elsweyr can be colorful at times.
