The point of nost is to make it as close to what retail vanilla was like as possible. In some ways this isn't possible, but that eliminates any elements like you suggest even considered.
There is a place maybe in the future where an established vanilla server could add custom content a long way down the road, like post naxx things, but that is assuming an awful lot and we'd likely have official legacy by then anyhow. Or aliens would have eaten us, yellowstone exploding, alex coming out, etc. All just as likely.

There are "funservers" that potentially offer things like that, you'd have to look around. None will have the kind of population nost enjoys.

I don't really find them small, the raid frames kind of look small because of the ress icon that is on them, and the buff bars are small since I really only need that area to check at a glance if I or someone is missing buffs. Some spells are on there multiple times so I can show cooldowns since macros don't do that.
